Ingredients
25ml/1fl oz dark chocolate, melted
125g/4oz mascarpone
50ml/2fl oz whipped cream
50ml/2fl oz coconut cream
1 tbsp icing sugar
6 strawberries, cut into half
1 ready-made brioche, cut into a 2cm/1in thick slice
1 strawberry, to garnish
Method
1. In a bowl mix together the chocolate, mascarpone, whipped cream, coconut cream and icing sugar.
2. Use a 7cm/3in chef's ring to cut a round out of the brioche. Place the ring onto a plate with the brioche round inside as a base.
3. Place the strawberries around the inside edge of the chefs' ring; then spoon the cream mixture into the ring until full.
4. To serve, gently remove the ring and place a strawberry on top, to garnish. Show me more cheesecake recipes
